This “raising a human” thing is no joke and can certainly leave you feeling ravenous with not much time to prepare a meal.  As a postpartum doula, one of my favorite things to make for my clients are energy balls.  I want to be sure to leave them with a healthy, quick and easy to grab snack that will leave them with plenty of energy to take care of their bundle of joy. 


One of my favorite recipes are these No Bake Energy Balls from Allrecipes.


No Bake Energy Balls

Prep:  10 min     Ready in:  40 min

Ingredients: 1 cup old-fashioned oats 1/2 cup peanut butter 1/2 cup ground flax seed 1/2 cup chocolate chips 1/3 cup honey 1 tablespoon chia seeds 1 teaspoon vanilla extract

Directions:

  1. Combine oats, peanut butter, ground flax seed, chocolate chips, honey, chia seeds, and vanilla extract together in a bowl. Cover and chill dough in the refrigerator 30 minutes.

  2. Remove dough from refrigerator; roll into balls, about 1 inch in diameter.

So, the next time you have a few minutes between diaper changing, bottle washing and singing “Let It Go” with your toddler for the 100th time whip up a batch of these bite sized pick me ups.  Or better yet, give us a call and we’ll make them for you!
